    Ingredients:
  • .5lbs Arbi
  • 1 onion (red or white) diced
  • 1 small finely diced onion
  • 1 tsp red chilli powder
  • 1 tsp dhania powder
  • 1.5 tsp amchoor powder
  • 1 tsp ajwain
  • 1 pinch haldi
  • 2 green chillies finely chopped
  • 1 tsp ginger paste
  • 1 tsp cumin seeds
  • 1 tsp garlic paste
  • salt to taste
  • 2 tsp oil
    Method:
  • wash and boil arbi; peel skin off
  • once cool, cut arbi like steak fries
  • heat oil in a pan and add cumin seeds until they sizzle
  • add chopped onions and heat until they turn translucent
  • add haldi and mix and cook for about a minute
  • add ajwain, dhania, turmeric, red chilli, and salt
  • cook it on the low heat for about 3 minutes
  • add ginger garlic paste along with the chopped green chilli and cook for 1 more minute
  • add arbi and mix well; cover the pan and let it cook for 15 to 2 mins stirring occasionally
  • once the arbi is soft, sprinkle with amchoor and cover and cook for another 3 mins
  • turn off gas and enjoy hot arbi with rotis
