Easy Pani Puri

  • 12 fresh figs, halved
  • 4 ounces herbed goat cheese (chevre)
  • 24 almonds
  • 1 tbsp honey
  • 1 tsp dried lavender
  • with the back of a small spoon, poke gently to crack the puffy pain puri shells; you want to retain the cup shape with a small opening
  • in each shell fill small amounts potatoes, a few chic peas, a few onions, a little bit of coriander, a pinch of salt and red chili powder to taste; make all shells this way
  • if you have a pain puri bottle concentrate, dilute it with about 2 cups water and a few spoons to your liking; adjust with salt and chili powder as needed
  • 1 tsp red chilli powderin a small bowl pour in the pain puri water
  • 1 small white potato boiled and peeled
  • dip a puri shell in the pani water and gobble the whole thing in your mouth like a dumpling
